A Healthy and Easy Dish For You – Spicy Thai Peanut Noodle

It’s really a chore to think of what to make for  lunch at your lazy days.  We hope to rest well after work hard, and enjoy a well-balanced life.You need  quick and delicious  meal recipes to satisfy your family.  Every kid seems to like peanut butter, so they will appreciate this dish you cook today! Let make spicy Thai peanut noodle, it could be either hot or cold.

Here is the way we like it:

1 ounce noodle your choice ( It could be soba, gluten free,or  spaghetti)

1 cup peanut butter

Half cup natural soy sauce ( I strongly recommended tamari sauce which results a smoother and richer flavor)

Half cup sesame oil

2 green onions, chopped

1 lare garlic clove, minced

1 red pepper, sliced and blached

1 bok choy, blanched and  chopped

5 or 6 pieces of sweet pea

Half long carrot, blanched

2 tablespoons of rice vinegar

1 teaspoon Asian chili sauce

1 tablespoon fresh lime juice

1 cup hot water

Half teaspoon salt

1 teaspoon Olive oil


Cook the noodles you chose according to the package directions in your rice ricecooker. (Just let them stay in the water for two minutes, then the bottom part will be soft, don’t forget to push the top half down into the water.)

Cut and blanch the vegetables.

Mix all the ingredients together except veggies. (That’s the source for you dish)

Add  source and cooked veggies to you noodle.
